Regular family holidays across Europe ignited Theo’s passion for food and from a young age he was destined for a culinary career. It was actually working as a waiter that Theo began his restaurant experience, working at the acclaimed Chez Max. After just a few weeks, Max Magarian saw Theo’s talent and passion, and invited him to work in the kitchen. He went on to spend the next four years following an apprenticeship in classic French cuisine.
In 1989, Theo joined River Café. Following a year’s secondment at Chez Panisse in Berkeley, California, Theo returned to The River Café bringing inspiration from the bountiful Californian produce he had been working with.
For the next 15 years, Theo remained at River Café as head chef and it was under his patronage that the restaurant received its first Michelin star in 1997.
